I have recently been diagnosed with ARMD and although there is no known cure my eye specialist has recommended I follow a diet high in the carotenoids Lutein and Zeaxanthin. He also suggested that I follow a food regime high in antioxidants and omega 3; as at that time my diet was high in carbohydrates, which in his opinion, accelerates the ageing process.
The following recipes have been devised to give the optimum amount of the above and I shall try, where possible, to state the amount of essential nutrients.
It has been suggested that between 10 and 20 mg of lutein and 450 mcg to 1 mg of zeaxanthin is required to maintain a healthy macular.
It is also worth noting that these carotenoids cannot be absorbed into the system without oil, so the recipes enclosed within will have oil or fats included.
