eggs florentine

Serves 4

Ingredients:

250g (8oz) Spinach
4 Eggs
2 tbsp Vinegar
Salt and black pepper to taste
2 tbsp olive oil
Cheese Sauce (See separate recipe)

Method:

Rinse and Dry the spinach and fry gently in the olive oil, meanwhile lightly poach the eggs in boiling water and the vinegar for no more than two minutes (the yolks must remain soft).  Line a heatproof dish with the spinach and make a hollow for the poached eggs, cover with cheese sauce and place under a hot grill until brown on top.  Serve immediately so that the egg yolks do not set.

This dish should provide approximately 4mg of Lutein per portion.
